A few weeks ago, my recipe for peanut biscuit roll was featured on the Modcloth Blog. Very exciting! And now I decided to share it with you guys, because it’s so easy to make and so delicious. One thing you should know is that the quantities in the recipe are not fixed – I often improvise when I make it. So, if it seems too fluid, add more biscuits, and if it’s too hard, just add some milk!
- 1½ cup milk
- 4 tbs sugar
- 2 cups biscuits (simple, store-bought)
- 1 cup peanuts
- 1 tbs cocoa powder
- ½ cup butter
- peanut butter to taste
- almond extract to taste
Mix milk and sugar and bring to boil, making a syrup. Meanwhile, shatter the biscuits into small pieces and mix them with peanuts and cocoa.
Add the syrup to the biscuits and add the almond extract. Add the butter and peanut butter and mix with a spoon until blended. The consistency should be that of wet biscuits.
Finally, put the entire composition in plastic wrap or aluminum foil and shape it like a roll. Refrigerate for a few hours, then slice like bread.
