Marzipan chocolate mousse recipe
The best thing about this recipe – besides the amazing taste – is that it’s sugar free, so it’s diet friendly! If you love marzipan and chocolate as much as I do, I’m sure you’re gonna enjoy this dessert. I started with a chocolate mousse recipe that I found online, which I adapted to fit my taste. Here is what you need to get started:
- 1 tablet dark chocolate (over 85% cocoa)
- 10 ml almond extract
- 1 egg
- 1 tbs fructose or 2 tbs sugar
- 1 tbs cocoa
- 200 ml cream
- fruit for decor
First thing you need to do is bring a pan of water to boiling point, then reduce heat. Break the chocolate into pieces in a heat-resistant bowl and place it over the simmering water. Don’t let it touch the water (check that the sizes fit beforehand). Stir until the chocolate melts and mix in about 10 ml almond extract – taste once in a while. Set it aside to cool.
In a different bowl, mix the egg and fructose (or, if you’re not dieting, sugar) until the composition is homogeneous. You can use a mixer or a whisk. Stir in the cooled chocolate composition and add an extra teaspoon of cocoa, until it’s nice and uniform.
Whip the cream following the instructions on the package. I hand whisked it, but you can use a mixer as well. Carefully and gradually add the cream into the chocolate with a metal spoon, mixing continuously. Put the content in two glasses or cups. Refrigerate for as long as you can handle, preferably overnight. Decorate with fruit and nuts – I used grape and pomegranate.
